Til ka tel, or cold-pressed sesame oil, comes from sesame seeds pressed through a wooden ghani that keeps the batch close to room temperature throughout extraction. This wood-pressed sesame oil carries the distinct nutty aroma central to traditional Indian cooking, a sign that little was altered along the way.
